Caesar.Salad.

Today I'm feeling like a yummy Caesar Salad, but if you're like me and don't like those little baby fishies, aka ANCHOVIES (ICK!), sitting on top of your salad, then Caesar is probably not your first pick when it comes to ordering a salad.

Well, up until now, I've always strayed away from making homemade Caesar dressing because of the not-so-lovely requirement of Anchovies, or some form of Anchovies (paste, etc.). However, I recently stumbled upon a recipe that requires no form of sea life what-so-ever and I am very excited to give it a whirl:

Ingredients -
  • 1/2 teaspoon salt
  • 1/2 teaspoon white pepper
  • 1/4 teaspoon dry mustard
  • 1/2 teaspoon Dijon mustard
  • 1 teaspoon lemon juice
  • 1 clove garlic, minced
  • 2 tablespoons white wine vinegar
  • 1 teaspoon Worchestershire sauce
  • 3 tablespoons olive oil
  • 1/2 cup vegetable oil
  • 1 raw egg (1 tablespoon mayonnaise can be used in lieu of the raw egg)
  • Pinch of sugar

Directions -

Add all of the ingredients to the bottom of a large mixing bowl. Add your lettuce of choice (Romaine is recommended) along with croutons and Parmesan cheese. Toss and enjoy!
